January 1st - Here is to a bubbly, happy 2021!

We always wanted to hike the Appalachian Trail, and while I doubt at this point we will ever do Maine to Georgia, we did a small portion of it on New Years Eve. Shout out to our niece and nephew, Emily and Daniel, who have done several portions of the AT!

We came upon this resting point.

Really makes me miss spa days with a good mud wrap - fingers crossed for 2021.

It was 65 degrees on New Year's Eve, so after the hike we were able to eat lunch outside at the Nantahala Brewing Company.

And speaking of breweries - we spent Wednesday in Asheville and had lunch at Wicked Weed. Thanks for the recommendation Blake Vaughn!

We also found a Williams Sonoma in Asheville and bought a new Le Creuset and All Clad skillet. Carol's Kitchen On the Road is getting more and more complete!

Putting that new Le Creuset to good use today. Pork and Sauerkraut for New Years!!

I forgot to include this story in an earlier post. A few weeks ago we were doing a hike on a trail that had a no leash rule, so Johnny was running everywhere. We came upon this huge split rock, so I stopped to take a picture. Jerry started cracking up laughing and asked if I saw that. "What?" I asked. He said, "Johnny just popped his head over the top of that rock". I said, "I missed it. I was taking the picture". Jerry said, "Actually, you probably caught it!". Sure enough. I will leave you today with this - on the first day of a new month and first month of a new year. Because we could all use a little luck! Rabbit Rabbit!
